Ginger baked tofu and Asian mashed potatoes

I bought the Kind Diet book on Amazon after I saw some awesome recipe's on the book's community site, the Kind Life. Some things turn out pretty good- but I've had some pretty big flops, and some things I just couldn't eat because of their sheer saltiness. This tofu is an example of that - it was so salty I couldn't finish one slab - and I LOVE tofu! Especially when it is marinated and baked. Dave liked this - but I did not.



Ginger-Baked Tofu

1 container extra firm tofu
1/3 cup soy sauce
3/4 cup H2O
2 Tbsp minced fresh ginger
1 Tbsp chopped garlic
1/4 cup brown rice vinegar
2 Tbsp umeboshi vinegar (omitted)
1/2 tsp crushed red pepper flakes (increased!)
1 tsp brown rice syrup
scallions for garnish (optional)

Whisk all wet ingredients. Cut tofu into 4 "steaks" - marinate for at least an hour (I marinated overnight which may be responsible for the overwhelming flavor) Bake at 375 on foil-lined baking sheet for 15-20 minutes. Baste with some remaining marinade and flip. Bake 15-20 minutes longer. Garnish with scallions if you feel so inclined.



Served alongside I made some Asian mashed potatoes - since I had boiled potatoes days earlier and never used them - and soba noodles with spinach (an old favorite). We usually don't usually even have one starch, but Dave was off to play in his Adult League hockey game, and I figured he could use the extra energy.

Asian mashed potatoes
5 red skinned potatoes
coconut milk creamer to assist in the mashing
1 Tsp red curry paste
1 Tbsp chopped cilantro
1 tsp chopped ginger
Sprinkle yellow curry
Na++ and pepper to taste

I just threw these together and they were very tasty!

BBQ Tofu

Once upon a time I saw THIS post on This is Vegan. The memphis BBQ tofu was a recipe belonging to Vegan Dad. A lot of links in a short time, I know! Well, I've made this dish COUNTLESS times, and the BBQ sauce is just the best. Of course, I had to make it without the Jack, as I drank it all long ago. Jack really shouldn't be used for cooking, use something else that is whiskey-related. Jack is for drinking. Only.

Regardless, I make the BBQ sauce ahead of time, press the tofu (sliced into slabs) under my cast-iron skillet, then apply a rub to the tofu when it is nice and dry. For a rub I usually throw whatever I have in my spice cabinet on the tofu. Today it was - herbs de provence, garlic powder, cayenne pepper, chili powder, paprika and salt and pepper... heavy on the cayenne. I saute the tofu one side in light olive oil until all nice and fragrant, then flip it, and apply some BBQ sauce. Tonight it turned out AMAZING.

On the side, like Mary at this is vegan, I made Nava Atlas' warm potato salad and black bean salad from Vegan Express. The recipe is basically: red skinned potatoes (microwaved until done), scallions, red pepper, lemon juice, artichoke hearts and black beans. I left out the artichokes - and added a spoonful of Veganaise.

Adding to my little BBQ was some left-over baked beans I had in the freezer*, and a chopped salad (greens, red pepper, scallions, avocado, and homemade raspberry vinaigrette).

The dish below is Dave's portion, I dug into mine too quickly to remember to snap a picture. It was great! I realize the picture looks a little gooey - which reminded me of THIS.


As we all know, tonight is Jersey Shore night, so I am going to read my book until it is time for the Situation. As a side note- I did a REAL handstand in yoga today! I win!

* These beans were actually made special for me by a friend of my husband's family. She made a batch without meat, and one with meat. It was so nice I almost cried. See, my husband and I have been together for three years and no one has EVER made anything special for me. I usually just sit there and watch everyone eat steak. I bring tempeh, and they just sit there calling it "air" and laughing, while simultaneously popping Lipitor with their free hands. When my husband asks ahead if there is any food I can have, they always make sure to say "we have a cheese ball!" As we all know, there is no better Chrsitmas dinner than a nice cheese ball. This Christmas they did roll the cheese ball in chipped beef, but that's a whole different story.

Tofu Etouffee

Some days the universe aligns to find a perfect meal. I always end up buying different produce at the store - of which I need a very small amount for a recipe. I refuse to let food go to waste- so today I was trying to use up: red potatoes, celery, one green pepper, one lone tofurkey sausage, and some tofu. I went to Vegan Dad - one of my very favorite recipe sites. I searched for a tofu meal - and lo and behold - found one that I had EACH AND EVERY ingredient for. This very rarely happens! The quick and easy tofu etouffee turned out awesome! (Dave put his over brown rice, I can't take too much starch).

Speaking of starch- I had some potatoes I really need to use up as well. I have no idea why I grabbed so many. I went to the quick recipe section of Nava Atlas' Vegan Express. The paprika sauteed potatoes sounded awesome- and tasted great as well. Basically you take red skinned potatoes that have been microwaved until soft, slice them, and sautee in olive oil with some garlic until browned. When browned add some paprika and scallions and you're set. And my fridge is a little emptier - making me a little happier! The all day Ron Hawkins marathon helped also. I miss Canadian music so much!
